This foamy, moderately rich sparkler is in all ways defined by time on the yeast, and fruit becomes but a distant player in its display of cream and toast. Despite the obvious autolysis found in its makeup, it is always quite clean, very well-focused and free of excess. Cerise Ros?for 2006 is a beautiful deep pink wine with a stunning bouquet of strawberries and roses. The palate shows sweet strawberry fruit with a pinch of mixed spice. Serve lightly chilled.
