Most of the world credits the invention of sparkling wine to the Champagne region, and to Dom Perignon. The legend, and possible real story, is far more interesting. According to Limoux natives, it was really invented there when Blanquette was created in their backyard. Its existence is documented as far back as the 1500s. When the great dom passed through, he stole the idea, they allege. If you plan to celebrate with some bubbly, you want to be sure you do it in style. You can get a crappy grocery store sparkling wine, but only vintages from the Champagne region are truly called Champagne. The 1999 is an absolutely delicious Comtes de Champagne that needs to be opened at least an hour or two in advance to show at its finest. Smoke, citrus, mint and flowers are some of the nuances that emerge from this fresh, fragrant Champagne. Deceptively lithe on the palate, the wine blossoms with air as it fills out with endless layers of perfumed fruit. The wine can be enjoyed today, even if it comes across as a touch sweet. With time, that sweetness will develop into the liqueur-like perfume that makes older Comtes de Champagne so irresistibly alluring.

Juicy and racy but a bit youthfully disjointed, combining some rather developed notes with slightly tart, spiky acidity. This could use a bit more stuffing and clarity of flavor. Firm minerally finish suggests some tannins. Kreydenweiss finds this very closed now and believes it needs a good eight years of bottle aging.
